Cucumber Stew
You will need:
4 large cucumbers
2 potatoes
100 ml sour cream
salt, pepper
ground red paprika
1 1⁄2 tablespoons pork lard
2 cloves of garlic
a bunch of fresh dill
Preparation:
Peel the cucumbers, slice or dice them, and salt them, then set aside to let them release water. Peel the potatoes and cut them into cubes. Squeeze the cucumbers by hand and discard the excess water. In the pot where you will cook the stew, first melt the lard or heat the oil, depending on what you use, add the pressed or chopped garlic, then add the potatoes. Pour in water and cook until the potatoes soften. Season with salt, pepper, and red paprika. Add the cucumbers and cook them for five minutes. Near the end, separate a bit of the liquid, mix it with the sour cream, and return it to the pot. Cook for another two minutes and turn off the heat. Season with chopped fresh dill.
