It‘s summer, it‘s hot, and it‘s not the time to spend too long in the kitchen, especially next to the stove and a hot oven. Luckily, today‘s recipe is so simple, and the dessert is ready so quickly, that you won‘t even notice you‘ve dirtied some dishes or briefly turned on the oven. It‘s something between the famous large Dutch pancake, zlevanka, and a juicy blueberry sponge cake, but in reality, it‘s none of those exactly.
The texture is light, almost as simple as its preparation, and thanks to the addition of your favorite berries it is slightly sweet and tangy. So, it‘s ideal for hot summer days when you crave one of the mentioned desserts, but don‘t have time to prepare any of them. This one, which is ready in five minutes and then bakes for another 20, will, trust me, be perfectly satisfying. It‘s the sweetest after the beach or after another long workday, far from the sea and summer vacation.
THREE IN ONE WITH BLUEBERRIES
You will need:
100 g milk
2 eggs
60 g flour
200 g blueberries
half a lemon
1 tablespoon powdered sugar
1 teaspoon vanilla extract or flavoring
40 g butter
Preparation:
Turn on the oven and preheat it to 200 degrees Celsius. Put the baking dish in the oven as well. In another bowl, mix the milk and eggs. Add the flour and a pinch of salt, then mix everything together. Combine the blueberries with the juice of half a lemon and a tablespoon of powdered sugar. Add a bit of vanilla as well. Stir most of the blueberries into the mixture. Take the baking dish out of the oven, add half the butter, then return it to the oven until it melts. When it‘s melted, brush it along the sides of the dish and pour in the mixture. Quickly place it in the oven and bake for about 20 minutes. Finally, sprinkle with the remaining fresh blueberries and powdered sugar as desired.
