You will need:
- 400 g tomatoes
- 2 peppers
- 4 cloves of garlic
- 1 large onion
- olive oil
- herbs (basil, thyme, oregano)
- pasta
- salt and pepper
- cheese as desired
Preparation:
Halve the tomatoes, clean the peppers and place everything in a baking dish. Add the unpeeled garlic cloves and onion cut into quarters. Season with salt, pepper, olive oil, and herbs. Mix everything well and place in the oven at 200 degrees for about 30 minutes. Meanwhile, cook the pasta. Save some of the pasta cooking water. Put the roasted vegetables in a blender or food processor, squeeze out the garlic, and add a little pasta water. Season further if needed and blend. Mix with the cooked pasta, grate some cheese on top, and serve immediately.
