The preparation of Skradin risotto is a ritual that lasts for hours, with slow stirring and adding of ingredients, all with the goal of achieving a perfectly creamy and delicate texture. While other risottos can be ordered "à la carte" and prepared quickly, authentic Skradin risotto demands complete dedication and patience, as every step brings an atmosphere and flavor that are unforgettable.
At the heart of this dish are the highest quality ingredients, but what makes it special is the way it is prepared. The onion is gently sautéed for hours, slowly releasing its sweetness, while the aroma of rich broth fills the air. That is the scent of Skradin, the scent of living tradition. Although originally prepared for the most important occasions, such as weddings, christenings, and other major anniversaries, its essence lies in its simplicity and love. Every bite brings people together, just as in the past it was cooked to help and celebrate together with family and friends," say the organizers as they announce another Risotto and Way of Life Festival to be held on September 13th in the very center of Skradin.
"Last year‘s Risotto and Way of Life Festival showed how gastronomic tradition can become a powerful social and cultural event," emphasized Skradin‘s mayor Antonijo Brajković, adding that for Skradin, risotto is not just a dish, but a symbol of community, spirituality, and the cultural identity of their town.
"The organization of the Festival is important because it brings together the local community, attracts visitors and the media, and creates recognition for Skradin on the map of wine and gastronomy destinations. The Festival is a place where tradition meets modernity and where Skradin presents itself as a city of rich heritage and openness to the world," Brajković emphasized.
According to him, the local community is extremely aware of the importance of the Festival and actively participates in its organization and execution.
"The people of Skradin experience risotto as part of their own identity – it is present at family gatherings and celebrations. Precisely because of this, the community enthusiastically embraces the Festival as a way to preserve and promote this heritage," adds Brajković.
"Our goal is for every generation to find its place within the Festival and to build a sense of pride and belonging through it," he added.
When asked what we can expect from the Festival in the coming years, he says he expects the Festival to grow into one of the key events in this area, which will gather an increasing number of visitors, chefs, and promoters of cultural and gastronomic tourism every year.
"Our goal is to further strengthen its international character and, through risotto, present Skradin as a city that cherishes its heritage but at the same time encourages innovation in gastronomy and lifestyle. We want the Festival to be a platform that connects the local community with a global audience," concluded the mayor.
It is also worth adding that this year the festival brings something special – live cooking of Skradin risotto in front of the audience. Although the local community is extremely proud of the tradition of preparing risotto, this is the first time that this ritual will be presented to a wider audience. The entire event will take place on Saturday, September 13th, at Trg Male Gospe, where risotto will be cooked as early as 3 p.m. Experienced local masters will finish cooking the risotto and reveal to you some skills that have been preserved for 150 years.
