In the heart of the old city center, at Zadarska ulica 8, Split has become richer for a sweet oasis that has already won the hearts of locals and tourists. The first specialized tiramisu bar in the city is exactly what Split was missing. Behind the whole story is owner Vedrana Petric, who, after long planning and a little ‘push‘ from her children, created a place that is already widely talked about.
"The reactions are really great, super positive. We have guests who come back every day. That‘s my favorite feedback," Vedrana tells us with delight.
The saying that good news travels fast is proven by the anecdote about guests who, while traveling from Pula to Orebić, decided to stop in Split just to try her tiramisu.
"They say they are thrilled. For now, I really have no words, thank you all," she modestly adds.
The idea for a tiramisu bar didn‘t come overnight. A few years ago, Vedrana ran a place on the Riva serving focaccias and sandwiches, and even then she wanted to include tiramisu in cups, but the space and conditions didn‘t allow it. She temporarily forgot about the idea until a friend mentioned seeing bars in Rome that sold only tiramisu.
"That hit me so much, you know when something inspires you like that. And that‘s how it all started," Vedrana recalls.
Still, the most beautiful part of the inspiration is hidden in her childhood memories.
"I don‘t know if you remember, when you were little and your immunity would drop, in Dalmatia they would give children egg yolk with sugar and a bit of prošek to lift you up. I thought that was perfect. All that was missing was adding mascarpone and there you have the whole story," Vedrana reveals the connection to the traditional Dalmatian ‘medicine.‘
Although the idea was there, and the recipe was perfected for months, Vedrana admits that she probably would have kept postponing the opening.
"I would have waited more, not yet this, wait for that... I kept postponing something," she laughs.
Then her children took matters into their own hands.
"They said ‘enough‘, posted a video on social media and announced: ‘We are opening on July 15.‘ And that was it, they forced me. Thank God for my children," says Vedrana.
There are currently six (soon seven) types of tiramisu on offer. Although the classic is the absolute favorite and most sought after, locals and their guests are happy to try other flavors too - pistachio, lemon, strawberry, salted caramel, and Kinder Bueno.
When asked about the secret recipe, Vedrana answers simply: the quality of the ingredients is key.
"We use pasteurized eggs, quality mascarpone, ladyfingers, and coffee. There’s no big philosophy here. Of course, everyone has their taste – some like more coffee, some sweeter, some stronger... I decided not to get confused and made it the way I like it and how I think is best. So far, it turns out the decision was right," concludes Vedrana, happy and a little surprised by the huge success her sweet bar has achieved.
